Birth of the Cool - Dry-hopped Mixed-Culture Saison, 7.7% abv.
An epochal new beer, Birth of the Cool heralds a new era of brewing at Dageraad. We fermented barley-hopped wort with a mixed culture of brewers yeast, bacteria and various strains of Brettanomyces and then heavily dry-hopped it with locally grown Sterling hops. The result is a tart beer with herbal hop overtones and a health brett funk lying underneath.
