Barrel-aged Mixed-culture Saison with Matsutake Mushrooms

This very small batch of beer was fermented in an oak barrel for a year with a mixed culture of brettanomyces and souring bacteria. We then stuffed in a bunch of matsutake mushrooms harvested by Mitch's parents in the forests around Terrace BC and left it for another six months.

Ingredients: Water, malted barley, triticale, wheat, buckwheat, matsutake mushrooms, hops, yeast, souring bacteria

Price includes 10% PST, 5% GST + 10¢ container deposit
