Calamansi is a tart and intensely flavourful citrus fruit widely grown in the Philippines, where the locals often make a refreshing cocktail by squeezing fresh calamansi into a glass of rum and ice cubes.
Inspired by this cocktail, Kala is a lightly tart amber ale with calamansi juice and turbinado sugar added to the fermentation. The sugar largely ferments away, leaving just enough residual sweetness and molasses character to balance the bright citrusy acidity of the calamansi juice.
