Mixed culture saison with spruce tips

Craig from Wheelhouse came to Burnaby with a bag full of Sitka Spruce tips so we could make this weird beer. Wheelhouse usually makes a delicious spruce tip pale ale, but we thought we’d Dageraad-up the beer and make a mixed-culture saison with them. Spruce tips are surprisingly fruity, with a light resiny character and the mixed-culture fermentation adds a light tartness and a bit of funk.

5.0% abv, 4 x 355mL

Ingredients: Water, malted barley, wheat, oats, Sitka spruce tips, hops, yeast
